Wild Atlantic Spiny Dogfish
Atlantic Spiny Dogfish meat is primarily consumed in Europe, the largest importer of dogfish. It’s a staple of the English cuisine, being used in their famous “fish and chips”. In France the dogfish is widely referred to as “rock salmon”, and is also popular among the Asian chefs for the fins and tails used for soup. In the United States, an increasing number of restaurants and institutions feature dogfish fillets on their menus. The filets are a great source of protein and are very cost effective.
Dogfish meat is lean, white and features a sweet and mild flavor, as well as a fairly firm texture.
